Pan di Spagna con Gocce di Cioccolato e Panna
"Panini for Buffet"
These are tiny sandwich bread rolls good for a buffet serving. You can fill it up with anything. Since I made these for a friend’s kid birthday party, of course I filled half of the sandwiches with salami and cheese and the rest with tuna fish and tomatoes.
For at least 30 pieces ( I forgot how many I was able to make, sorry) of small sandwiches rolls:
750 gr. flour
75 gr. sugar
110 gr. butter
13 gr. salt
25 gr. brewers’ yeast
250 gr. milk
some olive oil
In a stand mixer mix all the ingredients except for the yeast (diluted with some of the milk) which should be added almost at the end of the mixing. The dough must be smooth and no longer sticky, the consistency must be a little firmer. At this point take the dough out of the mixer. Let it rest in another bowl but don’t forget to spread some olive oil all over the bowl and the dough before living it to rest for 2 hours. Once it has doubled it’s size start creating small bread dough by rolling it with your hands. To make sure that every rolls will be of the same size, the tip is to weight each dough to 40 gr. before rolling them. Rolling the dough will be a little tricky. With one hand moving clockwise or counter clockwise let the dough take it’s shape with the help of a smooth flat surface (like the top table, make sure it’s clean).
Arrange the small rolls on a baking pan covered with baking paper. Brush the top with 1 beated egg. Then bake in a pre-heated ventilated oven for 220°C around 8 minutes.
Again it is up to you how you would like to fill the rolls. My favorite is Panini with Nutella!
